THE SALT BOOK: Cambodia - Salt Fields of Kampot
At the edge of Kampot town Cambodian people have been making salt on these old salt fields for centuries. Once the brine, saltwater, is poured on the fields, it is left for several days until much of the water has evapourated and salt crystals remain. The crystals are then scraped up and carried to a wooden warehouse which hold on average 2000 tonnes of salt. The local Cambodians earn around US$2.50 for one day of work on the fields and the salt sells for around US$0.25 per kilogram.
